Being on a boat didn't keep us from enjoying a delicious Thanksgiving feast. We picked up a frozen six pound Turkey (technically labeled a 'baking hen') the other day along with some stuffing and cranberry sauce.
We cleaned and stuffed the turkey with stuffing, onions, giblets, and butter. It went into the pressure cooker along with some chopped potatoes, onions, carrots, peanut oil, and lemon pepper seasoning. We cooked it for about two hours and it came out perfectly. Along with the bird, we had a spinach salad with homemade dressing, french bread, and the aforementioned cranberry sauce.
We're all still learning the intricacies of cooking on a pressure cooker (we weren't sure whether to cook under pressure or not - so we tried both), but we have deemed our Thanksgiving feast a success.
We each had a lot to be thankful for, including our families, Alan's Ham radio, our friends, our very supportive board of directors, all of the help we've received, and the great enthusiasm people have for our mission.
It was a little sad not being with our families (and especially for not being with the fourth member of our boat family - Liz), but we made do and are all very excited for the journey we are on now.
